I am working on building a 3 day training course on OJT. I have been struggling to find a good final exercise for the course. The first day teaches about how people learn, the second covers the competency program and the third day covers OJT techniques. I would appreciate any input you might have.

It seems to me a logical final exercise in a class on how to do OJT is to have the participants do OJT.

Have each of them teach a task using the techniques given in the course.

You're right. The thing that I am struggling with is what exercise should be used.

Make the participants come up with it entirely on their own. They choose the task. They set up the environment. They create their job aids or whatever they will use. The task has to be something simple, like how to answer the company telephone, how to enter data on one screen, etc. Something you can observe and measure.

It's real life, they are training someone to do something on the job.

You create an observation sheet on which you grade them for using the techinques you've taught and how well they met the objectives laid out at the beginning of class.
