I'm looking at different e-learning platforms (open source) and am wondering if there are any specific platforms or authoring tools you would recommend.

For an open source LMS platform you could consider Moodle ( http://moodle.org/), Sakai ( http://sakaiproject.org/portal), or Ilias ( http://www.ilias.de/). I have used Moodle, but also consider aTutor (atutor.ca). There are some feature differences.
